Ascorbyl palmitate is afat-soluble form of Ascorbic Acid, or Vitamin C. Unlike ascorbic acid, which iswater-soluble, ascorbyl palmitate is able to be stored in cell membranes untilneeded by the body.

 Ascorbyl palmitate is asynthetic ester comprised of the 16-carbon chain saturated fatty acid palmiticacid and L-ascorbic acid. The ester linkage is at the 6 carbon of ascorbicacid. It is used as an antioxidant in foods, pharmaceuticals, skin care andcosmetics, and is also used as a preservative for the natural oils, oleates,fragrances, colors, Vitamins and other edible oils and waxes which are used inpharmaceuticals, skin care, cosmetics and foods.

 It is assessed by the Committee on FoodAdditives of the World Health Organization (WHO) as a nutrient,efficient,safety food additives. it is the only one that can be used as Antioxidants ininfant food .
